Red velvet cookies with white chocolate chips!


One of my goals this year was to cook and bake more often now that we have our own place and a kitchen of my own! I've been pinning lots of recipes and things to try, and when I came across 
this one I was sold at red velvet + white chocolate chips (two of my favourite things!) A super simple, but delicious recipe and the perfect treat for Valentine's day! The recipe makes about 24 cookies - enough to give to all your favourite people (and maybe a few for yourself too)


What you'll need:
  • -a stand mixer or hand mixer
  • -2 bowls: one medium sized, one large
  • -non-stick cooking spray
  • -cookie sheets
  • -wire cooling rack
  • -measuring cups and spoons
  • -2 1/2 cups of flour
  • -1/2 cup of cocoa powder
  • -1 tsp baking soda
  • -1/4 tsp salt
  • -1 cup softened, unsalted butter
  • -1 cup granulated sugar
  • -2/3 cup brown sugar
  • -2 eggs
  • -2 tsp red food colour
  • -2 tsp vanilla extract
  • -1 package of pure white chocolate chips

Preheat over to 350°. Mix flour, cocoa powder, baking soda and salt in a medium bowl. Beat butter and sugars together in a large bowl, until fluffy and well blended. Add eggs, food colour and vanilla to butter mixture. Gradually add dry mix into the butter mix. Once well blended, fold in chocolate chips.

Spray a cookie sheet with non-stick cooking spray and drop a rough tablespoon of cookie mixture, spreading out by a few inches. Bake for 8-10 minutes. Remove from oven and let sit for 2 minutes before transferring to a wire cooling rack.


WARNING: these are suuuuuper addicting and it'll be hard to keep your hands off of them! They are soft, chocolately and just the right amount of sweetness. I'd suggest packing them into cute treat bags and handing out to all your Valentines so you aren't tempted to eat them all yourself!
