What you'll need:
-2 1/2 cups of pineapple (fresh or frozen)
-1 can organic coconut milk
-1/2 cup pineapple juice
Add all the ingredients to the blender and blend until it reaches a nice consistency (not too chunky) and pour evenly into the popsicle mold. I added shredded coconut to the bottom of the popsicle because MORE IS MORE! (they also look more fancy, I think) Put them in the freezer for about an hour before you add the popsicle sticks. I find this works better because if you add the sticks in while the mixture is still more liquid-y, they sink right down and it doesn't leave much space for holding the popsicle. Pop them back in the freezer for about 6 hours and once they are nice and frozen, remove and ENJOY!
